Thanks Rich.
Thee smashed potato details are just my basic starting point, and I usually add to it.
Variations include some variety of shredded cheese, scallions sliced diagonally or diced jalapenos, and maybe some variety of salsa. I guess I could also addchorizo or other spicy sausage.
Speaking of salsa, my local grocery store has finally started carrying a salsa that is extremely hot - I always keep some in the fridge.
Speaking of hot, I'm reminded of a time when I was managing a fast food restaurant in San Ysidro, less than a mile from the border with Mexico. I was the only Anglo there. One day some of the employees were teasing me about how gringos couldn't handle not Mexican food. Our restaurant sold small cups of 5 or 6 jalapenos and they bet me that I couldn't eat all 6 of them.
Well, I ate all six and happily collected around $50 from those who bet against me.
But I'll admit that I couldn't match them on one point - after eating the jalapenos they would drink the very spicy juice that covered the peppers in the small cups. I couldn't do that, but fortunately that wasn't part of the bet.

Don't blame me - I didn't vote for him!
